What to Plant in Zone 7B: A Beginner’s Guide to Growing Your Own Garden 🌱

If you're thinking about starting a garden but have absolutely no idea where to begin, welcome to the club!

I'm Pamela and still learning my way around gardening myself, one of the biggest things I've learned is that when you plant something can be just as important as what you plant.

If you live in Zone 7B, you actually have a pretty good growing season. And if you're reading this toward the end of summer, don't think your gardening season is over. Fall gardening is just getting started!

🌱 What Exactly Is Zone 7B?

USDA Plant Hardiness Zones are based on average winter temperatures and help gardeners determine which plants are likely to survive in their area.

For Zone 7B, the average last spring frost is around April 5–15, while the average first fall frost is around October 25–November 5. Of course, your actual frost dates can vary from year to year and even from one part of town to another.

That means Zone 7B gardeners have a pretty nice window for growing vegetables.

And here's the part I wish someone had explained to me when I first started:

You don't just have one gardening season.

You can have a spring garden, summer garden AND fall garden!

🌿 What Can You Plant in Zone 7B?

There are so many options, but if you're a beginner, I recommend starting with vegetables that don't require a ton of fussing and that I personally grew in my raised bed nd container gardening my second season.

🥬 Kale

Kale is one of my favorite choices for a beginner fall garden.

It loves cooler weather and can actually tolerate some frost.

For Zone 7B, Virginia Tech recommends planting kale in the fall from approximately August 10 through September 20.

And here's a bonus: you can harvest the outside leaves while allowing the plant to continue growing.

🥬 Lettuce

If you want something relatively easy and fast-growing, lettuce is a great place to start.

For Zone 7B, baby salad lettuce can be planted from approximately September 1–October 20, while head lettuce has an earlier fall window.

Lettuce is also great for small raised beds and containers.

🌱 Spinach

Spinach loves cooler temperatures and is another excellent fall crop.

Zone 7B's fall planting window is approximately September 10–October 20.

This is one I'd definitely put on your beginner garden list.

🌶️ Radishes

If you want a vegetable that gives you a relatively quick payoff, try radishes.

Zone 7B's recommended fall planting window is approximately September 1–October 10.

They're also great for kids because you don't have to wait forever to see the results.

🥬 Collards

Collards are another fantastic cool-weather vegetable.

For Zone 7B, fall planting is generally around August 10–September 20.

They can tolerate cooler temperatures and are a great option for extending your growing season.

🌱 What Should a Beginner Plant First?

If you're completely new to gardening, don't feel like you need to grow 20 different vegetables.

Start small.

If I were creating a beginner Zone 7B fall garden, I'd start with these options:

• Kale

• Lettuce

• Spinach

• Radishes

• Carrots

• Broccoli

• Cabbage

• Collards

These give you a nice mix of leafy greens, root vegetables and larger vegetables.

And honestly, you don't need a huge garden to get started.

A couple of raised beds, containers or even a small garden area can be enough.

🌻 What About Flowers?

Don't forget about flowers!

Flowers can bring pollinators into your garden and make the entire space more enjoyable.

Some flowers can also be planted as companion plants around vegetables. Marigolds are one of my personal favorites because they add a pop of color while making the garden feel more like a little backyard oasis.

💦 One Beginner Gardening Mistake: Don't Forget About Water

This sounds obvious, but it's easy to forget.

Late summer soil can be hot and dry, which can make seed germination difficult.

Virginia Cooperative Extension recommends planting fall vegetables when the soil is moist and watering thoroughly when necessary.

If you're planting seeds, keep that top layer of soil from drying out while you're waiting for them to germinate.

🐛 Don't Panic When You See Bugs!

I learned this one the hard way.

Gardening doesn't mean your plants will be perfect.

You're going to see:

🐛 Caterpillars🪲 Bugs🐌 Slugs🦟 Gnats🍂 Yellow leaves🌱 Plants that don't make it

And that's okay!

Part of gardening is learning what your plants are trying to tell you.

The goal isn't to have a perfect garden.

The goal is to learn. You might just become obsessed. 😂🌱
